TINYBIRD - LES BONSBECS FRAMBOISE - BAIE DE GOJI
Category Recette / Formulation
Our first battlefield is “Les BonsBecs”, candies that come in three flavors: Raspberry - Goji berries; Lemon - Chia Seeds and Pear - Lin Seeds.
We have chosen to follow a strict specification when developing our recipe : we do not use any flavor (artificial or natural), coloring or preservative and all our ingredients are planted base.
Our innovative recipe is the result of a long R&D period where we have tested over 800 recipes to reinvent a unique and innovative gummy candy.
We did not want to make concessions regarding the choice of our ingredients which posed 2 main challenges.
Challenge 1: Obtain a delicious texture without animal gelatin and without bad sugar: we have developed a unique combination of agar and pectin.
Challenge 2: Molding and drying our “BonsBecs”: confectioners currently use starch to mold candy.
However, this technique assumes that the humidity in the product is low. For this reason, most brands currently use concentrated fruit juices.
We did not want to use concentrated ingredients or overheat our fruits (in order to keep the natural taste of the fruit and the nutrients present).
For this reason, we choose to use in silicone molds, and we had to develop a custom-made machine with an Italian manufacturer.
